Very soft and creamy * Ingredients 60g (4.5 tbsp) Cooking oil 80g (1/3 cup) Milk 100g (3/4 cup) Cake flour 6 Eggs 1.25ml (1/4 tsp) Vanilla extract 2g Lemon juice 65g (5 tbsp) Sugar 100g Mascarpone cheese 18g (1.5 tbsp) Sugar 1.25ml (1/4 tsp) Vanilla extract 120g (1/2 cup) Heavy whipping cream Cake pan size: 25x40cm 170°C (340°F) Bake for 35 minutes Refrigerate for about 1 hour * Important tips: 1. If you don't like vanilla extract, you can omit it. 2. The main reason for the skin to fall off is not baked through, the surface is too wet so the skin will fall off when rolled later. To avoid falling off, you can increase the baking time, or bake at high temperature for 10 more minutes. If your oven has a fan function, please use the fan function to bake, so the surface is easy to dry. 3. There are two reasons for the cracking: one is that the egg whites are too dry, and the second reason is that the baking temperature is too high. Therefore, when whipping the egg whites, try to whip them a little soft, wet foam, and the whisk is a big hook. Because this baking pan is relatively large, so the chance of cracking is very small, you can use a relatively high temperature to bake. 4. Do not wait for the roll to cool down before rolling, when the temperature of the cake roll is close to hand temperature you can do, it is easier to crack the roll after it cools down 5. 딸기 크림으로 아이싱한 딸기 롤케이크를 만들었어요~ I made a strawberry roll cake by icing it with strawberry cream! 부드러운 연유 버터크림에 건조 딸기 가루를 넣어 연한 핑크빛의 크림으로 아이싱 했는데 포근하고 사랑스러운 느낌의 롤케이크가 된 것 같아요. 슬라이스한 딸기를 올려 장식하니 딸기 느낌이 더 강하게 나더라구요. 시트가 부드럽고 탄력이 있어서 잘 말아 굳히면 모양이 동그랗게 잡힌답니다. 안에 있는 하얀 크림은 우유 맛이 나고 겉에 바른 크림은 딸기 우유맛이 나서 정말 맛있더라구요~ 즐겁게 시청하세요~♬ Enjoy~ - ▶틀 사이즈 Mold size : 30cm x 21cm ▶재료 달걀노른자 4개 설탕 15g 소금 1g 바닐라익스트랙 4g 식물성오일 30g 우유 50g 박력분 70g 베이킹파우더 2g 달걀흰자 4개 설탕 75g 무염버터 120g 연유 100g 생크림 75g 딸기 버터크림 (무염버터 50g, 연유 35g, 생크림 30g) 딸기가루 3g 슬라이스한 딸기 ▶레시피 1. 달걀노른자를 풀고 설탕과 소금 바닐라 익스트랙을 넣고 섞은 뒤 우유와 식물성 오일을 넣고 섞는다. 2. 밀가루와 베이킹 파우더를 체에 쳐서 넣고 뭉침이 없도록 잘 섞고 잠시 둔다. 3. 차가운 달걀 흰자를 휘핑하다가 거품이 올라오면 설탕을 30초 간격으로 3번에 나누어 넣고 뿔이 살짝 휘는 머랭을 만든다. 4. 머랭의 1/3을 노른자 반죽에 넣고 섞고 남은 머랭의 반을 더 넣고 살살 섞은 뒤 머랭이 담긴 볼에 섞은 반죽을 모두 붓고 조심스레 섞는다. 5. 주걱으로 볼이 바닥까지 잘 섞였는지 확인하며 섞고 오븐 팬에 부어 평평하게 한 뒤 170도 오븐에서 25분을 굽는다. 6. 구운 케이크 시트는 바로 틀에서 꺼내 가장자리를 잘라내고 마무리가 되는 쪽은 사선으로 자른다. 7. 실온 상태의 버터를 핸드믹서로 풀고 연유를 넣어 크림 상태가 될 때가지 충분히 휘핑한다.(중간에 분리 나는 것 같아도 계속 휘핑하면 됩니다) 8. 생크림을 넣고 휘핑해 크림을 완성하고 케이크 시트에 골고루 평평하게 바르고 시작 부분에 크림을 더 올린다. 9. 딸기를 나란히 놓고 크림을 덮은 뒤 케이크를 돌돌 말고 단단하게 고정한 뒤 냉장실에서 1시간 정도 굳힌다. 10. 실온 상태의 핸드믹서로 풀고 연유를 넣어 크림 상태가 될 때까지 충분히 휘핑하고 생크림을 넣어 휘핑한 뒤 딸기 가루를 넣어 휘핑한다. 11. 딸기 크림을 롤케이크에 골고루 바르고 무스 띠를 이용해 매끈하게 다듬고 냉장실에 20분 정도 잠시 넣어 둔다. Filling - 125 ml whipping cream - 20 gram granulated sugar - you can also use fruits you like Baking tray is 38 cm length ,24 cm breadth (inside) and 2 cm height. . However, this recipe can be used for slightly smaller or slightly larger pans. * NOTES for Success 1. Egg white, the bowl that has egg white and the whisks should not have any strokes of fat such as yolks, oil, butter... otherwise the egg white will not be able to turn foamy (or be whipped to stiff) 2. The baking temperature and time may change depending on your oven. Some oven has unevenly heat (upper heat is higher than bottom heat or vice versa). So the best way is to watch your cake. Make sure that there is no crack on the surface of the cake while it's baking. Heat the light cream to a slight boil, turn off the heat and add 5g of jasmine tea bag. Let it sit for five minutes. Cool it over ice water and then chill overnight. ② Prepare the matcha cake roll. Freeze the egg whites for ten minutes. ③ Mix the warm corn oil and matcha powder evenly, then mix in the warm milk. Subscribe for more recipes: 🤍 INGREDIENTS - 4 large eggs, separated and at room temperature - ¼ cup icing sugar (32 g), sifted, plus extra for dusting - 1 tsp (5 mL) vanilla extract - ⅒ tsp salt - 2 Tbsp (25 g) granulated sugar - ¾ cup (96 g) cake and pastry flour - ⅔ cup (160 mL) raspberry jam DIRECTIONS 1. Preheat the oven to 350 F. Line the bottom of a 15-x-10-inch jelly roll pan with parchment paper. 2. Place the egg yolks and icing sugar in a large bowl or in the bowl of a stand mixer fitted with the whip attachment and whip until the yolks have doubled in volume and hold a ribbon when the whip is lifted, about 4 minutes. Whip in the vanilla. 3. In a separate, or cleaned bowl, whip the egg whites with the salt first on low speed until foamy, then increase the speed to high and pour in the granulated sugar, whipping until the whites hold a medium peak. 4. Sift half of the flour into the yolk mixture and fold in using a whisk, then fold in half of the whipped egg whites. Repeat with the remaining flour, and then change to a spatula to fold in the last of the whites until evenly incorporated. Spread the batter into the prepared pan, taking the time to ensure the batter is level. 5. Bake the cake for about 12 minutes, until the cake springs back when gently pressed in the centre. Let the cake cool for about 2 minutes on a cooling rack, then loosen the sides with a spatula. Sift a layer of icing sugar over the surface of the cake and cover with a clean tea towel. Place a second cake pan over the towel and quickly invert the cake, removing the pan it was baked in. Peel off the parchment paper and dust this surface with icing sugar. Roll the cake up from the 10-inch side with the towel and let it cool completely (cooling it rolled sets its “memory” so the cake won’t crack once filled). 6. Stir the raspberry jam to soften. Unroll the cake and spread an even layer of jam over the cake. Roll the cake back up again, dust the top with icing sugar. Cover and store at room temperature until ready to serve. 7. The cake can be prepared up to a day in advance and stored, wrapped and unrefrigerated. Buen fin de semana para todos!! *La frase de hoy : Yeppuda = Bonito/a = 예쁘다 ••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••• INGREDIENTES * Roll cake (mermelada) - Molde 30cm x 23cm - 4 piezas de Yemas de huevo. - 53g de Azúcar refinada. - 1g de Sal. - 9g de Jarabe de maíz. - 4g de Extracto de vainilla. - 18g de Agua. - 4 piezas de Claras de huevo. - 49g de Azúcar refinada. - 78g de Harina de trigo. - 38g de Aceite vegetal. - 1 a 2 g de Polvo de cacao. - Mermelada de fresa. - Trapos de algodón húmedos. ••••••••••••••••••••••••••••••••••••••• PROCEDIMIENTOS 1.En un bowl con las yemas agregar azúcar, sal y jarabe de maíz. Batir hasta que tenga volumen y que el color sea mas claro. 2.Agregar agua y extracto de vainilla. Batir. 3.En el bowl con las claras, batir una vez y cuando hace burbujas grandes y pequeñas, agregar la mitad de azúcar. Seguir batiendo hasta tenga consistencia. 4.Agregar la otra mitad de azúcar y batir hasta conseguir el merengue con pico. 5.Agregar 1/3 de merengue al batido de las yemas. Mezclar. 6.Agregar harina de trigo y mezclar. 7.Agregar aceite vegetal y mezclar. 8.Agregar los restos de merengue. Mezclar bien. 9.Apartar un poco de masa en un bowl pequeño y mezclar con polvo de cocoa. 10.Vaciar la masa al molde. Con una espátula extender para que sea del mismo grosor. 11.Con la masa de cocoa dibujar encima del pan. Y con un palito hacer las figuras. INGREDIENTS: -6 large eggs, separated -6 tbsp milk, room temperature -4 tbsp vegetable oil -1 tsp vanilla extract -3/4 cup granulated sugar -1 cup all purpose flour -1 tsp baking powder -4-5 cups Cream Cheese Frosting FLOWER PATTERN- -1 large egg -2 tbsp granulated sugar -1/3 cup flour -1 tbsp vegetable oil -pink, purple, teal, yellow and peach food coloring FLOWER PATTERN- Line a 9X13 baking pan with parchment paper. Whisk together the ingredients for the flower pattern and divide equally into 5 separate bowls. Color each bowl a different color, then transfer the batter into individual piping bags. With the yellow batter, pipe small dots onto the parchment paper until fully covered. Pipe 5 dots using another one of the other colors around each yellow dot to form a flower shape. Alternate between the different colors. Place the Tay into the freezer to chill. Preheat the oven to 375F, then separate the egg whites from the egg yolks into two mixing bowls. Whisk the milk, oil, and vanilla into the bowl of egg yolks. Next, sift in the flour and baking powder. Whisk until combined and set aside. Beat the egg whites on high speed until foamy, then slowly add in the sugar while continuing to whisk. Beat until stiff peaks have formed. Gently fold the meringue into the egg yolk mixture, about 1 cup at a time. Be careful not to deflate the meringue while mixing. Pour the batter on top of the chilled flower pattern and smooth to the edges of the pan. Place into the oven and bake for 12-15 minutes. Once baked, flip onto a floured surface, remove the parchment, and allow to cool for 5-10 minutes. Trim the edges of the cake if needed. Spread a layer of cream cheese frosting evenly onto the cake. Carefully roll up the cake and tightly wrap in plastic wrap. Place into the fridge to chill for at least 1 hour before serving.
